Vanilla Madeleines

Made these today using this recipe:

  • 100g plain flour , plus extra for dusting
  • 100g caster sugar
  • 100g butter , melted
  • 1 whole egg , separated, plus 1 egg white
  • 1 tsp vanilla extract
  • icing sugar , for dusting
  • STEP 1 – Heat oven to 190C/170C fan/gas 5. Butter a 12-hole madeleine mould (use a tiny amount of the melted butter) and dust lightly with flour. You can use tartlet tins if you don’t have the a madeleine mould.

  • STEP 2 – Mix the flour and sugar in a bowl. Put the butter, egg yolk and vanilla into a separate bowl and whisk with a fork to mix. Whisk the two egg whites until stiff. Fold the butter mixture into the dry ingredients until evenly mixed, then fold in the egg whites in two batches using the whisk.

  • STEP 3 – Divide between the prepared moulds and bake for 10-12 mins until golden brown and firm to the touch. Leave to cool in the moulds for a few mins, then turn out and cool on a wire rack. Dust with icing sugar before serving.

National Banana Day

This is the recipe i used:

  • 100g baking spread
  • 50g soft light brown sugar
  • 3 bananas (about 300g)
  • 2 eggs
  • 150g plain flour
  • 2 tsp baking powder
  • ½ tsp cinnamon
  • a pinch of ground nutmeg
  • 12 banana slices for decorating with buttercream

  • Preheat the oven to gas 4, 180°C, fan 160°C. Line a 12-hole cupcake tin with paper cases.
  • Add the butter and sugar to a large bowl and cream together with an electric whisk for 2-3 mins until light and fluffy. Peel the bananas and add to the bowl in rough chunks along with the eggs. Beat again until everything is well combined and creamy.
  • Sieve together the flour, baking powder and ground spices into another bowl. Add to the banana mixture and gently mix to combine.
  • Divide the mixture between the paper cases and smooth the tops before adding a banana slice to each. Bake for 20-25 mins until golden and springy to the touch. Cool in the tin for 10 mins before transferring to a wire rack to cool completely then decorate. The cakes will keep for up to 3 days in an airtight container.
